Absolutely. The business works closely with nature, rearing trout in high-quality spring water and focusing on traditional small-scale production methods that prioritise quality, provenance and environmental stewardship.
Where does your salmon come from?
Our smoked salmon is prepared using carefully selected salmon sourced from the Highlands coast, before being cured and smoked in North Devon using our traditional methods.
How is the North Devon Cure made?
Our North Devon Cure combines traditional Scandinavian-inspired curing techniques with slow smoking over oak and beech wood. Using home-reared Devon trout and carefully selected salmon, each fish is dry-cured, slowly smoked and rested over several days to develop its distinctive flavour, texture and quality. It is a handcrafted process where time, patience and expertise are the key ingredients.
How does slow smoking affect flavour?
Slow smoking allows the fish to develop a richer, more complex flavour while maintaining a delicate texture. By smoking our salmon and trout gradually over oak and beech wood, the smoke enhances rather than overpowers the fish, creating the balanced taste and melt-in-the-mouth texture that Blakewell's award-winning products are known for.
