Devon Distillery is an artisan spirit producer based in South Devon, best known as the UK’s first and only micro‑distillery making grape marc spirit—their award‑winning British take on grappa, known as Dappa. Founded in 2012 by Cosmo Caddy, the distillery draws on Italian techniques while championing British ingredients, distilling grape skins sourced entirely from English vineyards.
Over the years, Devon Distillery has grown into one of the region’s most innovative drinks businesses, producing a range of distinctive spirits and offering hands‑on distillery experiences.
Award‑Winning Spirits Crafted with Innovation
Devon Distillery is celebrated for its creativity and experimentation, producing a portfolio of unique, small‑batch spirits, including:
Dappa – British Grappa. Their flagship spirit, Dappa, is distilled from upcycled grape skins using a custom‑built Italian copper still, then aged for a minimum of 12 months to develop a clean, smooth, earthy character with award‑winning finesse.
Dark Fire – PX‑Aged Marc. A bold, barrel‑aged version of Dappa matured in Pedro Ximénez sherry casks, offering cherry, apricot, and berry sweetness and a lingering smokiness.
Devoncello – A Devon Twist on Limoncello. Crafted with organic Sicilian lemons and Dappa spirit, steeped slowly over months for a bright, crisp, zesty liqueur.

Chocolate – Cacao and Vanilla Liqueur. A luxurious chocolate spirit made with cacao nibs and vanilla, velvety and deeply aromatic with ruby colouring and decadent mouthfeel.

They also offer “Still On The Move”, a mobile gin‑making experience ideal for weddings, private events and festivals.
Sustainability & Upcycling
A key value for Devon Distillery is the upcycling of grape pomace—the leftover skins from English wine production. This reduces waste and creates new value from a raw material that would otherwise be discarded.
